Lemon Muffins


The boys and I mixed up some yummy lemon muffins the other day. They were a great afternoon snack & there were even a few left for breakfast the next morning. Next time I will definitely double the recipe.


Lemon Muffin Recipe
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup flour
1 tsp baking powder
1/4 tsp salt
4 tbsp lemon juice
1 tbsp lemon zest

In a bowl, cream the butter and sugar. Add in egg yolks and mix well. Combine flour, baking powder, salt, lemon juice and zest. In a separate bowl, beat egg whites until stiff peaks form. Then fold egg whites into the batter. Bake at 350 degrees for about 20 minutes - less time if you make mini muffins.
