Chocolate Eclair

This dessert is so delicious & so easy!  Connor's Orientation & Mobility specialist from school gave us this recipe.  Its a new favorite!!!  Connor did everything except put ting on the final chocolate frosting.

What you need:
2 packages of instant sugar free French Vanilla pudding
1 box of graham crackers
1 container of chocolate frosting
stick of butter
spreading knife
casserole dish or cake pan

Go ahead & make the pudding by following the box directions & chill until set.   Once your pudding is ready, you can get the rest of this done in about 10 minutes.

Take your cake pan & coat it in butter.  This make cutting & removing the dessert a cinch.  You will want to cut, remove & eat this yummy dish over & over!  Dang, I wish we hadn't eaten all our's.  I may be making this again SOON - yummmmmm

Now put down a layer of graham cracker.  Whole crackers - no crushing needed.  Next spread 1/2 of your pudding on top. Put down another layer of graham crackers.

 Yum!  Its is going to be SO good!  Go ahead & spread the other 1/2 of the pudding on top of this second graham cracker layer.  Here's the only hard part - spreading the chocolate frosting on the last graham cracker layer.  Nah, its not that hard, just go slowly.  Doesn't it look good?  Go ahead & lick the frosting knife.  I know you already licked the pudding bowl  :0)  Its okay, I did!!!
Now put this delicious concoction in the fridge for at least 12 hours - actually a full 24 hours is perfect.  Let the pudding get in those graham crackers & make them a soft.  I'm telling you, this is good stuff!  Even days later, it just gets better.  This thing tastes like a chocolate eclair or even a Boston Cream Pie.
