I made this for dinner last night & it was divine.
Ingredients:
1lb DeCecco Gnocchi (pasta not potato)
1 1/4 cup frozen peas
1/2 cup diced bacon - I left it out & next time will use veggie bacon
3 tbsp extra virgin olive oil
1 medium chopped onion
2 tbsp butter
2 eggs
1/2 cup grated parmesan cheese
freshly ground black pepper
salt
Cook the chopped onion in a little water and when soft, add the peas. Salt to taste. In a seperate pan saute the bacon in butter. Cook the Gnocchi for 10 minutes in briskly boiling salter water and drain.
Add the bacon abd the peas to the pasta. Then add the beaten eggs, the Parmesan cheese and freshly ground black pepper, to taste. Toss and serve, add some grated Parmesan cheese at the table, if desired.
I must admit, the eggs bit freaked me out. Go ahead though - the hot pasta & peas cook the egg & it is delightful! Yum & yum! Those little gnocchi pasta are perfect for holding the peas & creamy sauce.
